Let me espouse the virtues of a very cool little program called Synergy. Synergy is a PreferencePane that lets you control iTunes via keyboard shortcuts or by using controls in the Menu Bar. You can set whatever keys you want to use for such things as next or previous tracks, pause, volume up/down.
